Campfire Nachos:

Campfire Nachos are a delicious and easy-to-make camping meal. You'll need tortilla chips, black beans, shredded cheese, salsa, and optional toppings like jalapenos, onions, tomatoes, and black olives. Layer these ingredients in a cast-iron skillet or disposable aluminum pan, cover with foil, and cook over a medium campfire or grill until the cheese is melted and bubbly. Garnish with sour cream, guacamole, and cilantro, then serve directly from the cooking vessel. This customizable recipe is perfect for outdoor adventures, offering a satisfying and flavorful lunch or dinner option.

Ingredients
  

  • 1 bag of tortilla chips
  • 1 can of black beans drained and rinsed
  • 1-2 cups of shredded cheese cheddar, Monterey Jack, or a blend
  • 1 jar of salsa
  • 1 small can of sliced jalapenos optional
  • 1 small onion diced (optional)
  • 1 small tomato diced (optional)
  • 1 small can of sliced black olives optional
  • Sour cream guacamole, and cilantro for garnish

Instructions
 

  • Prepare your campfire or grill. You want a medium heat for cooking the nachos.
  • In a large cast-iron skillet or disposable aluminum pan, create a layer of tortilla chips.
  • Sprinkle a handful of shredded cheese over the chips, then scatter a handful of black beans, and a few spoonfuls of salsa. If using, add the optional diced onion, diced tomato, sliced jalapenos, and black olives.
  • Repeat the process, creating layers until you've used up your chips, cheese, beans, and salsa. Try to end with a generous layer of cheese on top.
  • Cover the skillet or pan with aluminum foil.
  • Place the covered skillet or pan on the grill grate over your campfire or on your grill. Cook for about 10-15 minutes, or until the cheese is melted and bubbly. Be sure to check often to prevent burning.
  • Carefully remove the skillet or pan from the fire (it will be very hot). Let it cool for a few minutes.
  • Garnish with dollops of sour cream and guacamole, and sprinkle with fresh cilantro if desired.
  • Serve directly from the skillet or pan with a sturdy serving spoon or spatula. Enjoy your campfire nachos!

Notes

Remember, you can customize this recipe with your favorite nacho toppings. Other great additions could be cooked ground beef or shredded chicken, corn, or green onions.
